Chocolate Amaretto Truffle Cake

Ingredients:

For the Cake:

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 1 tsp Vain Vanilla's 10th Anniversary Amaretto Blend
  • 1/2 cup almond flour (optional for added texture and almond flavor)
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp salt

For the Ganache:

  • 1 1/2 cups semi-sweet chocolate chips or chopped chocolate
  • 3/4 cup heavy cream
  • 2 tbsp unsalted butter
  • 1 tsp Vain Vanilla's 10th Anniversary Amaretto Blend

For Garnish (optional):

  • Sliced almonds, toasted
  • Powdered sugar
  • Fresh berries

Directions:

Prepare the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
  2. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.

  3. Add eggs one at a time, mixing well after each addition. Stir in the Vain Vanilla- 10th Anniversary Costa Rican Vanilla in Amaretto.
  4. In a separate bowl, sift together almond flour (if using), all-purpose flour, cocoa powder, and salt. Gradually fold the dry ingredients into the wet ingredients until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  6. Allow the cake to cool completely in the pan before inverting onto a wire rack.

2. Make the Ganache:

  1. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer (don’t let it boil).
  2. Remove from heat and pour over the chocolate in a heatproof bowl. Let sit for 2-3 minutes, then stir until smooth.
  3. Stir in the butter and the 10th Anniversary Amaretto Blend until fully incorporated.

3. Assemble the Cake:

  1. Place the cooled cake on a serving plate or cake stand.
  2. Pour the ganache over the top of the cake, letting it drip down the sides for a smooth, glossy finish. Use a spatula to spread evenly, if needed.

4. Decorate (Optional):

  • Sprinkle toasted sliced almonds around the edges.
  • Dust with powdered sugar for a classic look.
  • Add fresh berries for a pop of color and flavor.

5. Serve:
Chill the cake for at least 3 hours (or overnight) to let the flavors deepen and the ganache set. Serve at room temperature with a dollop of whipped cream or a scoop of vanilla ice cream.
